Our history

The Salisbury's history dates back into the 18th Century when the building was known as The Bell. It became part of the McMullen family in 1891 and is very much at the heart of the Hertford drinking, dining and sleeping "scene".

The Hotel, in the centre of Hertford, remains true to the original mantra in providing the very best in warm and personal service whilst ensuring that it delivers on the promise to provide excellent food, comfortable bedrooms, traditional real ales and host of wonderful wines, which are all delivered with a smile.

We want our guests to never just come to The Salisbury once, we want you to become part of our family - we have many guests that we see every morning for coffee, those that share every family celebration with us and many more that don't even bother about having a reason to join us anymore!

Our heritage

Quite simply McMullen and Sons has been at the very heart of everything that has happened in Hertford for over 150 years. It was 1827 when Peter McMullen, a Master Cooper by profession, started selling barrels and casks to the ten small brewing companies that were established in Hertford town at that time.

He soon decided to go into brewing, starting in an outhouse adjacent to his cooperage before building and moving to a full scale commercial brewery known as the Mill Bridge Brewery less than three years later. In those early days, Peter sold his beer to many pubs and individuals. It was not until Boxing Day 1836 that he bought his first pub, the Greyhound at Bengeo. The deal included three cottages on four acres of land at a consideration of £481.

In 1891 a new Brewery was built in the centre of Hertford along with the first well which was ‘sunk’ to a depth of 140 feet. It took nine days to complete the job and cost £93-18s-8d! Since then two more wells have been sunk going down some 250 feet, maintaining our own unique supply of natural water for our brewing operations.

It was in the same year as the Brewery was built (1891) that The Salisbury Arms became part of the McMullen business – and we are delighted to still be part of it.
